Ingredients:

  • 600 g sweet potato, grated
  • 1 egg
  • 3 tbsp of feta cheese
  • 1 tbsp of flour
  • Green parts of 3 spring onions, chopped
  • 2 tbsp of olive oil
  • 1 tsp of grated nutmeg
  • 1/2 tsp of black pepper
  • 1/2 tsp of salt

Instructions:

  1. Mix all ingredients in a mixing bowl until well combined.
  2. Pour the mixture into the cake mold lined with greaseproof paper. Spread the mixture evenly in the mold.
  3. Bake in a preheated 200°C oven for 30-35 minutes.
  4. After removing the cake from the oven, let it sit at room temperature for 5 minutes before removing it from the mold. Serve after slicing as you wish.
