1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant raw
2 tsp Italian seasoning dried

- Preheat air fryer to 375F for 8 minutes.
- Slice eggplant evenly into 1-inch (2.5 cm) rings.
- Combine oil, salt, pepper, and Italian seasoning in a small bowl and mix well.
- Using a silicone brush, brush the eggplant slices on both sides with the oil mixture.
- Place seasoned eggplant slices in the air fryer basket in a single layer and cook for 5 minutes. Check on eggplant, turn down the temperature if browning too quickly. Cook until eggplant is soft and golden brown, about another 5-7 minutes.

Tip:
For crispier eggplant, in Step 2, spread the eggplant slices on a clean kitchen towel. Lightly salt the eggplant slices and let them sit for 30 minutes to release their moisture. Pat dry slices with a paper towel or clean kitchen towel.
