To prepare the dressing, whisk shallots, broth, oil, vinegar, mustard, salt, and pepper in a small bowl.
To prepare the salad, cut pears into 16 slices each and place in a large bowl. Cover with one tablespoon of dressing and toss to coat.
Add lettuce, arugula, dried cranberries, and remaining dressing; toss well.
